Fall-ing in Love with Soup

On this wet, but wonderfully colorful fall day, I bring you a warm and delicious soup. Yes, that is how much I like you. Behold, curried zucchini soup!


How can you enjoy this delectable treat? Rough cut 3 zucchinis, 1 carrot, 1 onion, and smash 3-4 garlic heads. And by rough, I mean big chunks; don’t waste time being pretty. Dump this into an oven safe pot, add 2 tsp of curry, some salt, and enough olive oil to lightly coat the veggies. Stir it all together and put it in the oven to broil for 40 minutes (you could do this in a crock pot with a timer if you wanted). When it’s done, add a box of chicken broth (4 cups), a dash or so of cayenne, ground black pepper, and juice of half a lemon. Stir and simmer on the stove for a few minutes. Then blend it all together -in batches in a blender or with one of those cool immersion blenders like the one I have in some storage warehouse in Charlotte. Enjoy and think of me, my burgeoning cooking skills, and how thoroughly disappointing it will be for Kevin when we return to reality and he doesn’t get my soup anymore…
